Black Bean Soup

There is nothing like soup to warm you up on a brisk Fall day. I found this recipe from a Dave Lieberman cookbook, and the recipe can also be found online. I have made this soup time and time again, and it always turns out amazing.  It cooks up quickly on the stovetop, and if you have all your ingredients ready when you start, you can have this meal on the table in about 30 minutes. It makes a big pot of soup, so if you have a small family, feel free to cut the ingredients in half. (Just pop the other half a can of broth and tomatoes in a freezer bag for another meal.)

Black Bean Soup

Ingredients:

10 slices bacon, finely chopped

2 medium onions, chopped

6 cloves garlic, finely chopped

1 14.5 oz can chicken broth

1 can diced tomatoes

2 Tbsp ketchup

2 tsp worcestershire sauce

1 Tbsp chili powder

4 cans black beans, drained but not rinsed (or 1 bag prepared dried beans)

1 bunch cilantro, leaves picked and coarsely chopped

salt and pepper to taste

juice of 1/2 lime (more or less to taste) or a few generous squirts lime concentrate

Garnishes: thinly sliced green onions, sour cream, shredded cheddar cheese

Instructions:

Cook bacon pieces in a large pot until they start to get nice and crispy, about five minutes or so.

Add chopped onions and cook until they start to turn translucent, about 4 minutes. Stir in garlic and cook about 1 minute.

Add broth, tomatoes, ketchup, worcestershire sauce and chili powder. Stir in the beans and bring to a boil. Lower heat to a simmer and allow soup to gently bubble about 10 minutes.

Stir cilantro into the soup and simmer an additional 5 minutes until soup is thickened.

Add salt and black pepper to taste. (I just give it a few dashes of freshly ground pepper and omit the extra salt.)

Stir in lime juice and serve with garnishes.
